Add 1 teaspoon salt and 1 tablespoon oil in the flour. Knead well and prepare stiff dough. cover with a moist cloth for ˝ an hour.

Ingredient:       
250  Grams flour
125  Grams sprouted moong-chana                            
125  Grams gujrati sev
200  Potatoes (boiled, finely chopped potatoes
100  Grams onions (finely chopped) 
     1  Tablespoon green chilli-ginger paste
     2  Cups curd ( sweetened)
     1  Cup tamarind-date chutney
     2  Tablespoons fresh coriander chat masala salt to taste
         Oil to fry
                        
                        
 
 

 
Method :

  • Add 1 teaspoon salt and 1 tablespoon oil in the flour. Knead well and prepare stiff dough. cover with a moist cloth for ˝ an hour.
  • Divine the dough into 25 parts and roll each one into small puri’s. stick this on the bottom of a steel glass.
  • Heat the oil. Lower the temperature and then press the glass in the oil touching the base of the kadai so that the puri,s do not blow.
  • When the puri,s turn golden brown, remove  it. Do this with the remaining dough. the katori,s are ready. Store in an airtight container.
  • Add a little salt in the moong-chana and boil for 5 minutes.
  • Stuff the prepared katori,s moong-chana, potato, onion, green chilli paste, sweet curd and a little tamarind-date chutney on top.
  • Serve garnished with sev, chat masala and chopped coriander.
