Crispy Kachori

Ingredient:
½ Kg flour
½ Cup green gram
200 Grams gram flour
2 Teaspoons red chili powder
½ Teaspoon garam masala
2 Teaspoons dry mango powder
4 Tablespoons oil
1 Tablespoon dry coriander (ground)
¼ Teaspoon asafoetida
Salt to taste , oil to fry
Method:
- Soak green gram in water for 2 hours and boil it such that it is a still hard.
- Sieve the flour, add 4 tablespoons oil and d1 teaspoon salt, knead a dough, cover it with a cloth for 2 hours and leave it.
- Heat oil and cook green gram in it for 2 minutes.
- Add gram flour, asafoetida, coriander and cook on a low flame.
- When the gram flour turns light brown, add 1-cup water and cook.
- When the water dries, switch off the gas and add dry mango powder, red chilli powder garam masala and salt in it.
- When this stuffing cools, make small marble size balls.
- Make small balls of the flour and roll it. Place the stuffing on this and close all sides. Press with your palms making it round and flat (2 inch in diameter)
- Heat oil and then switch off the gas fry about 5 minutes of the prepared kachoris. When the kachoris begins to blow up, switch on the gas and fry on a low flame.
- When the kachoris turn golden brown, remove on an absorbent paper.
- Serve with tamarind chutney.
